Tire of the same old, same old?
This is what I though of to cook for lunch and this delicious meal might be my supper.
The other day I boiled some potatoes that look as if they might need some attention in my pots before they spoil. I though a few days ago, I would use them for a beef stew, but instead, used them for this recipe.
I've been pasta out and so I thought about using them with the meatballs I bought yesterday as part of my emergency food stock!
Meatballs with Potatoes, I thought, now how does that work.
Well 20 minutes later, I would say,'very well'!
Here is the recipe. Simple and easy!
Ingredients: 15 small meatballs, 4 cut up potatoes,
1 12 oz of crushed tomatoes, 3 slices of cheese of your choice, 1 tsp salt, 1 tsp black pepper, 2 cloves chopped garlic or powder garlic, 1 tsp cumin, 1 tbsp sugar, 1 small slice of chopped ginger(not necessary-but a great enhancement for taste).
You can go with this as a meal! A meal for 4 people.
However, what I had left over was a cup of cream rice nd carrot juice(from the drain of rice and carrots cooked together).I saved this from a meal yesterday to add nutrients to my next dish which is now, the Potato Meatball Stew.
I don't get fancy with they type of pot to cook it in. I just grabbed the nearest one I saw and that was my stainless steel Wok!
Delicious is not the word for this great meal!
And on a Snowy Day! It was Wonderful!
